Greek Summer Salad

greek summer salad3This salad always reminds me of Paros island, where I first tried capers…. ❤

It’s perfect for hot summer days like these!!!!


  • some rusks,
  • 2 tomatoes, ripe,
  • 1 cucumber, with the skin left on, (optional),
  • 1 green pepper,
  • 1 small dry onion,
  • black olives,
  • 1-2 tbsp of capers drained,
  • fresh oregano leaves,
  • 1/3 cup of extra virgin olive oil,
  • 1-2 tbsp of wine vinegar,
  • salt.


  1. Cut the rusks into chunks and place them into a bowl.
  2. Cut the tomatoes into 8 and slice cucumber and pepper.
  3. Slice thinly the onion and place all veggies into the bowl.
  4. Add the olives, capers and oregano leaves.
  5. Make the sauce by whisking together the olive oil, the vinegar and the salt.
  6. Pour the sauce over the salad and serve.greek summer salad1

  1. Wow, a real Greek salad – no lettuce!! 🙂 We had something, I think called dakos? Just tomatoes, olive oil, a little salt & vinegar piled on top of rusks like bruschetta. I would love to try it this way.
