- 1 pineapple,
- 100 gr of coconut, grated,
- 2 cups of sugar.
- Peel the pineapple, remove the core and thinly slice it in the large drain, or use a food processor (but without grinding too much). Place into a pot.
- Add the other ingredients and cook over medium heat.
- Stir with wooden spoon, while cooking, until there is no liquid left.
- Place in a greased bowl with coconut oil and let mixture cool completely.
- Make balls with the mixture and roll them over crystalized sugar.
