Aromatic Roasted Potatoes with Citrus Zest and Herbs

  • 2 Kg potatoes, cut in pieces
  • 1 1/2 cup of olive oil
  • zest of two lemons and two oranges
  • juice of two oranges
  • fresh thyme
  • fresh rosemary
  • Himalayan salt
  • Black pepper, ground


  1. Preheat oven at 350 F (180 C) degrees.
  2. Place potatoes into a pan.
  3. Add the rest ingredients and stir.
  4. Bake for about an hour, or more, until golden brown.
  5. Add some water while baking, if needed.

  1. I’ve saved this recipe to try out. I grew a lot of potatoes last summer and am looking for new and flavorful ways to use them. Right now I’m roasting fingerling potatoes by themselves but the next batch will definitely be roasted with lemon zest and herbs.

    Roasted vegetables are a staple in our home. An interesting twist on roasting potatoes using citrus. Will be giving this a try, and it’s paleo — well, it’s sort of paleo, as it is undecided if white potatoes are on the paleo safe list.
