Ingredients
Base:
- 1 cup raw almonds
- 1 cup dates
Caramel:
- 1 cup dates
- 1/4 cup water
- 1 tbsp almond or peanut butter
Chocolate pudding:
- 1 avocado (ripe)
- 1/4 cup cocoa powder
- 1/4 cup raw honey (or 1/2 cup dates 1/4 cup + water)
- 1 tbsp almond milk
Banana ice cream with vanilla flavor:
- 3 frozen bananas, cut in small pieces
- seeds from a vanilla pod
Goji Berry sauce:
- 1/4 cup goji berries
- 3 tbsp honey
- 30 ml water
Preparation
Base:
- Soak “base” dates into the water for about an hour.
- Blend almonds in the food processor until they become crumbs.
- Strain water from dates and squeeze gently.
- Add dates into the food processor and mix again until the mixture stick together.
- Press the mixture into the bottom of a silicon cake tin and set aside.
Caramel, Chocolate pudding and Goji berry sauce:
- Blend all the “caramel” ingredients in the food processor until soften and become a thick and creamy mixture.
- Place into a bowl and set aside.
- Do the same to make the chocolate pudding and the goji berry sauce, and pour mixtures into separate bowls.
Banana ice cream with vanilla flavor:
- Mix bananas and vanilla in a blender at high speed until gets thick and gains smooth and creamy texture. It can take a minute, but then it turned into ice cream very quickly, so pay attention.
Assembling the cake:
- Spread the banana ice-cream over the nut basis.
- Then carefully spread chocolate pudding over the banana ice-cream and place in the freezer overnight.
- Let it in room temperature for about 20 minutes before serve.
- Garnish with the goji berry sauce.
